Ingredients

  • 600 grams Fresh squid
  • 1 whole Lemon
  • 2 leaves Bay leaves
  • 15 grams Fresh parsley
  • 10 grams Fresh thyme
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Black pepper
  • 2 cloves Garlic cloves
  • 4 cups Water

Directions

Step 1

Clean the squid by removing the head and internal organs. Rinse the bodies and tentacles thoroughly under cold running water. Cut the bodies into rings about 1-2 cm thick.

Step 2

Zest and juice the lemon. Set both aside separately.

Step 3

Peel and crush the garlic cloves with the back of a knife.

Step 4

In a large pot, bring 4 cups of water to a boil. Add the bay leaves, crushed garlic, and half of the lemon zest. This will infuse the water with flavor.

Step 5

Once the water reaches a boiling point, add the squid rings and tentacles to the pot.

Step 6

Let the squid boil for about 2-3 minutes until they become opaque and tender. Do not overcook, as squid can turn rubbery.

Step 7

Drain the squid in a colander, discarding the bay leaves and garlic cloves. Rinse under cold water to stop the cooking process.

Step 8

Transfer the drained squid into a serving bowl.

Step 9

In a small bowl, whisk together the lemon juice, remaining lemon zest, olive oil, and black pepper to create a dressing.

Step 10

Drizzle the dressing over the boiled squid.

Step 11

Finely chop the fresh parsley and thyme. Sprinkle these herbs generously over the squid.

Step 12

Toss the squid gently to ensure all pieces are coated with the dressing and herbs.

Step 13

Serve immediately as a light, refreshing dish perfect for any seafood lover.
