Directions

Step 1

Peel the russet potatoes and cut them into 1/2-inch cubes. Rinse the cubes under cold water to remove excess starch, then pat them dry with a clean towel.

Step 2

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Step 3

Add the potatoes to the skillet in a single layer. Cook for about 5 minutes without stirring, allowing the bottoms to turn golden brown.
