Ingredients

  • 12 ounces Whole grain penne pasta
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 6 ounces Unsalted tomato paste
  • 28 ounces Canned no-salt-added crushed tomatoes
  • 1.5 teaspoons Dried oregano
  • 1.5 teaspoons Dried basil
  • 1 teaspoon Sugar
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 3

Add the unsalted tomato paste to the skillet, stirring for about 2 minutes until it starts to slightly caramelize.

Step 4

Pour in the canned no-salt-added crushed tomatoes, and add the dried oregano, dried basil, sugar, black pepper, and red pepper flakes. Stir to combine.

Step 5

Lower the heat and let the sauce simmer for about 20 minutes, stirring occasionally, until it thickens and the flavors meld.

Step 6

Add the cooked penne pasta to the skillet, tossing it gently to coat the pasta completely with the tomato sauce.

Step 7

Serve the pasta hot, sprinkled with grated Parmesan cheese and chopped fresh parsley for garnish.
