Ingredients

  • 1.5 cups Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Creamy unsalted peanut butter
  • 0.5 cup Granulated sugar
  • 0.5 cup Dark brown sugar, packed
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

Step 2

In a medium bowl, combine the rolled oats, flour, baking powder, and cinnamon. Mix well and set aside.

Step 3

In a large mixing bowl, beat the softened butter and peanut butter together until smooth and creamy using an electric mixer.

Step 4

Add the granulated sugar and dark brown sugar to the butter mixture. Beat until well combined and fluffy.

Step 5

Add the egg and vanilla extract to the sugar-butter mixture and continue beating until fully incorporated.

Step 6

Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.

Step 7

Using a tablespoon, scoop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Using the back of a fork, gently press down on each ball of dough to flatten slightly and make a crisscross pattern.

Step 9

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
