Ingredients

  • 8 oz whole wheat pasta
  • 3 cups broccoli florets
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp lemon juice
  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp red pepper flakes
  • 0.25 cup parmesan cheese, grated (optional)
  • 2 tbsp chopped parsley

Directions

Step 1

Bring a large pot of water to a boil. Once boiling, add the whole wheat pasta and cook for about 8-10 minutes, or until al dente according to package instructions.

Step 2

While the pasta is cooking, in a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for 4-5 minutes until they are tender but still bright green.

Step 3

Add the minced garlic to the broccoli skillet and sauté for another 1-2 minutes until the garlic is fragrant. Be careful not to burn the garlic.

Step 4

Drain the pasta, reserving 1/2 cup of the cooking water. Add the cooked pasta and reserved pasta water to the broccoli and garlic in the skillet. Drizzle with the remaining olive oil.
