  • 8 cups Ripe papayas
  • 4 cups Granulated sugar
  • 0.5 cup Fresh lime juice
  • 1 cup Water
  • 1 box Low sodium pectin

Directions

Step 1

Peel and deseed the papayas. Chop the flesh into small pieces.

Step 2

In a large saucepan or pot, combine the chopped papayas with water and place over medium heat.

Cook the papayas for about 10-15 minutes until they become soft and mushy.

Step 4

Mash the cooked papayas with a potato masher or blend them using an immersion blender until smooth.

Step 5

Add the fresh lime juice to the papaya mixture and stir well.

Step 6

Gradually stir in the low sodium pectin and bring the mixture to a rolling boil that cannot be stirred down.

Step 7

Once boiling, add the granulated sugar all at once. Stir continuously to dissolve the sugar.

Return the mixture to a rolling boil and boil for exactly 1 minute, stirring constantly to prevent burning.

Step 9

Remove the pot from the heat and skim off any foam that has formed on the surface.

Step 10

Carefully pour the hot papaya jam into sterilized jars, leaving about 1/4 inch headspace.

Step 11

Seal the jars with sterilized lids and rings. Process in a hot water bath for 10 minutes to ensure safe preservation.

Step 12

Allow the jars to cool completely at room temperature. Store sealed jars in a cool, dark place. Refrigerate jars after opening.
