Ingredients

  • 1.5 cups Rolled oats
  • 0.5 cup Almond butter
  • 0.25 cup Unsweetened cocoa powder
  • 0.5 cup Chopped nuts (such as almonds, walnuts, or pecans)
  • 0.25 cup Mini dark chocolate chips
  • 0.25 cup Honey or maple syrup
  • 2 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine the rolled oats, almond butter, unsweetened cocoa powder, chopped nuts, mini dark chocolate chips, honey or maple syrup, chia seeds, and vanilla extract.

Step 2

Mix the ingredients thoroughly using a spatula or your hands until they are well combined. The mixture should be sticky enough to form into balls.

Step 3

If the mixture is too dry, add more almond butter or a bit of water, a teaspoon at a time, until the desired consistency is reached.

Step 4

Once mixed, use a tablespoon or a small cookie scoop to portion out the mixture. Roll each portion into a ball with your hands.

Step 5

Place the energy balls onto a lined baking sheet or a plate. Continue this process until all the mixture is used up.

Step 6

Refrigerate the energy balls for at least 30 minutes to firm them up. This will also enhance the flavors.

Step 7

Once set, store the energy balls in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
