Ingredients

  • 250 g All-purpose flour
  • 200 g Unsalted butter
  • 1 tsp Baking powder
  • 150 g Granulated sugar
  • 1 tsp Vanilla extract
  • 3 large Eggs
  • 150 g Apricot jam
  • 200 g Walnuts, finely chopped
  • 200 g Hazelnuts, finely chopped
  • 100 g Brown sugar
  • 3 tbsp Water
  • 100 g Dark chocolate, melted

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 13 x 9 inch baking dish with parchment paper.

Step 2

In a large mixing bowl, combine all-purpose flour, baking powder, and 100g of granulated sugar.

Step 3

Add 150g of unsalted butter (cubed) and one egg to the dry ingredients and mix until you get a crumbly dough.

Step 4

Press the dough evenly into the prepared baking dish to form the base.

Step 5

Spread the apricot jam evenly over the dough layer.

Step 6

In a saucepan over medium heat, combine the remaining 50g of unsalted butter, brown sugar, and water. Stir until the sugar completely dissolves.

Step 7

Stir in the walnuts and hazelnuts, and remove from heat.

Step 8

Gently fold two beaten eggs into the nut mixture and ensure it is well combined.

Step 9

Carefully spread the nut mixture over the jam layer in the baking dish.

Bake in the preheated oven for 25 minutes, or until the edges are golden brown.

Allow to cool completely in the baking dish before removing and cutting into triangular pieces (corners).

Once cooled, dip each corner into melted dark chocolate and allow them to set on a wire rack.
