  • 250 milliliters low sodium vegetable broth
  • 10 pieces banana leaves or aluminum foil
  • 500 milliliters water

Directions

Step 1

Begin by soaking the black-eyed peas in water for 4 hours or overnight to soften them.

Step 2

Once soaked, peel the black-eyed peas by rubbing them between your hands to remove the skins. Rinse thoroughly until most skins are removed, then drain.

Step 3

Chop the red bell pepper, onion, and scotch bonnet pepper into smaller pieces for blending.

In a blender, combine the peeled black-eyed peas, red bell pepper, onion, scotch bonnet, garlic cloves, and ginger. Add a little water to help blend into a smooth, thick paste.
