Ingredients

  • 200 grams glutinous rice flour
  • 50 grams granulated sugar
  • 240 milliliters water
  • 50 grams cornstarch (for dusting)
  • 100 grams red bean paste (optional)

Directions

Step 1

In a medium mixing bowl, combine 200 grams of glutinous rice flour and 50 grams of granulated sugar.

Step 2

Gradually add 240 milliliters of water to the flour-sugar mixture, stirring continuously until smooth and lump-free.

Step 3

Transfer the mixture to a microwave-safe bowl and cover with plastic wrap, leaving a small gap for steam to escape.

Step 4

Microwave the mixture on high for 2 minutes. Remove and stir the mixture carefully with a heat-resistant spatula.

Step 5

Recover with the plastic wrap and microwave for another 1-2 minutes, until the mochi is thick and somewhat translucent.

Step 6

Dust a clean work surface generously with cornstarch to prevent sticking.

Step 7

Transfer the hot mochi onto the dusted surface using a spatula, then dust the top of the mochi with more cornstarch to handle it without sticking.

Step 8

Roll the mochi dough into a log and cut into 24 equal pieces.

Step 9

For plain mochi bites, simply roll each piece into a ball, ensuring each is well coated in cornstarch to prevent sticking.

Step 10

For filled mochi bites, flatten each piece into a small disc, place a teaspoon of red bean paste in the center, and carefully fold the edges over to encase the filling. Press gently to seal and shape into a ball.

Step 11

Dust off any excess cornstarch before serving. Serve immediately or store in an airtight container for up to 2 days.
