Ingredients

  • 1 pound lean ground beef
  • 0.5 cup onion, finely chopped
  • 0.5 cup breadcrumb, unsalted
  • 0.25 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons parsley, chopped
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the finely chopped onion, unsalted breadcrumbs, and milk. Let the mixture sit for about 5 minutes to allow the breadcrumbs to absorb the milk.

Step 3

Add the ground beef, beaten egg, minced garlic, Italian seasoning, black pepper, and chopped parsley to the breadcrumb mixture. Mix well using your hands until all the ingredients are evenly combined. Be careful not to overwork the mixture to keep the meatballs tender.

Step 4

Using a tablespoon measure, scoop out portions of the meat mixture and roll each portion into a compact mini meatball, roughly 1 inch in diameter. Place each meatball on the prepared baking sheet.

Step 5

Once all the meatballs are formed, lightly brush the tops with olive oil to help them brown in the oven.

Step 6

Bake the meatballs in the preheated oven for 12-15 minutes, or until they are fully cooked and browned on the outside.

Step 7

Remove the meatballs from the oven and let them cool slightly before serving. Serve warm as an appetizer with a low sodium dipping sauce or add them to your favorite pasta dish for a hearty, low sodium meal option.
