Ingredients

  • 1 teaspoon Vanilla extract
  • 24 pieces Whole raw almonds
  • 0.75 cup Dark chocolate chips (low sodium)
  • 0.125 teaspoon Sea salt (optional, for sprinkling)

Directions

Step 1

In a medium-sized bowl, combine the unsweetened shredded coconut, pure maple syrup, melted coconut oil, and vanilla extract. Stir until the mixture is well combined and sticky.

Step 2

Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, form the coconut mixture into mini bite-sized mounds (about 1 inch in diameter) and place them on the prepared baking sheet.

Step 3

Press one whole almond gently onto the top of each coconut mound, slightly flattening it.
