Ingredients

  • 200 g All-purpose flour
  • 100 g Unsalted butter
  • 50 g Granulated sugar
  • 1 large Egg yolk
  • 1 tsp Vanilla extract
  • 750 ml Low-fat milk
  • 45 g Cornstarch
  • 1 tsp Ground cinnamon
  • 100 g Granulated sugar (for filling)
  • 2 large Eggs
  • 1 tsp Vanilla extract (for filling)

Directions

Step 1

Preheat oven to 180°C (350°F).

Step 2

For the crust, sift the flour into a mixing bowl. Add unsalted butter and rub in with your fingers until the mixture resembles breadcrumbs.

Step 3

Add 50g sugar, egg yolk, and vanilla extract to the flour-butter mixture and mix until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Step 4

Roll out the dough on a floured surface to fit a 9-inch tart pan. Press dough into the pan and trim any excess from the edges.

Step 5

Prick the base of the crust with a fork and bake blind (with parchment paper and baking weights) for 15 minutes. Remove weights and parchment, and bake for an additional 5 minutes or until golden brown.

Step 6

In a medium saucepan, heat the milk until warm but not boiling.

Step 7

In a bowl, whisk together cornstarch, 100g sugar, and eggs until smooth.

Step 8

Slowly add the warm milk to the egg mixture, whisking continuously to prevent curdling.

Step 9

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a custard-like consistency, about 8-10 minutes.

Step 10

Remove from heat and stir in 1 tsp vanilla extract.

Step 11

Pour the filling into the baked crust and smooth the top.

Step 12

Sprinkle ground cinnamon evenly over the top of the filling.

Step 13

Allow the tart to cool to room temperature, then refrigerate until set, at least 2 hours.

Step 14

Slice and serve chilled.
