  • 15 ml Lemon juice
  • 56 grams Unsalted butter
  • 227 grams Low sodium mascarpone cheese
  • 50 grams Powdered sugar
  • 5 ml Vanilla extract

Directions

Step 1

Pour the heavy cream into a small saucepan and heat over medium-low heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

Remove the saucepan from the heat and add the lemon juice. Stir gently and let the mixture sit for 5 minutes to let it curdle.

Place a fine-mesh sieve over a bowl and line it with several layers of cheesecloth.

Pour the curdled cream into the lined sieve and let it drain at room temperature for about an hour.
