  • 4 large Fresh artichokes
  • 0.5 cup Lemon juice
  • 0.25 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 3 large Garlic cloves
  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh basil
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 1 teaspoon Lemon zest
  • 8 cups Water

Directions

Step 1

Begin by preparing the artichokes: Cut off the top quarter of the artichokes and trim the stems. Remove the tough outer leaves until you reach the tender, light green leaves. Cut the artichokes in half lengthwise and use a spoon to scoop out the fuzzy choke.

Step 2

In a large pot, bring 8 cups of water to a boil. Add half the lemon juice to the boiling water. Add the prepared artichoke halves and reduce the heat to a simmer. Cover and cook for about 15-20 minutes or until the artichokes are tender.

While the artichokes are cooking, prepare the marinade: In a large mixing bowl, whisk together the remaining lemon juice, olive oil, balsamic vinegar, minced garlic, chopped parsley, chopped basil, black pepper, red pepper flakes, and lemon zest.
