Ingredients

  • 8 ounces whole wheat macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups skim milk
  • 1.5 cups low sodium cheddar cheese, shredded
  • 0.5 cup low sodium mozzarella cheese, shredded
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 1 cup frozen peas

Directions

Step 1

Bring a large pot of water to a boil. Cook the macaroni according to package instructions, omitting any salt. During the last 2 minutes of cooking, add the peas to the pot. Drain and set aside.

Step 2

In a medium saucepan, melt the unsalted butter over medium heat. Stir in the flour to make a paste. Cook for about 1 minute, stirring constantly, to remove the raw flour taste.

Step 3

Gradually whisk in the skim milk, making sure to break up any lumps, until the mixture is smooth and begins to thicken, approximately 5 minutes.

Step 4

Reduce heat to low and add the shredded low sodium cheddar and mozzarella cheeses. Stir until the cheeses have melted and the sauce is smooth.

Step 5

Add the ground black pepper and garlic powder, stirring to combine. Taste and adjust the seasoning if necessary.

Step 6

Combine the cooked macaroni and peas with the cheese sauce in the saucepan, stirring until everything is evenly coated with the sauce.

Step 7

Serve the low sodium macaroni and cheese with peas warm, garnished with additional black pepper if desired.
