  • 2 pounds beef marrow bones
  • 4 tablespoons unsalted butter
  • 2 pieces shallots, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 cup red wine
  • 2 cups low-sodium beef broth
  • 3 sprigs fresh thyme sprigs
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 450°F (230°C).

Step 2

Place the beef marrow bones on a baking sheet and roast them in the oven for about 20 minutes, or until the marrow is browned and bubbling.

Carefully remove the bones from the oven and scoop out the marrow using a small spoon into a bowl. Set aside the bone marrow and discard the bones or save them for making broth later.

In a medium saucepan over medium heat, melt the unsalted butter. Add the chopped shallots and cook until they become translucent, about 3 to 4 minutes.
