Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 4 cups cooked brown rice
  • 2 tablespoons olive oil
  • 1 cup mushrooms
  • 2 cups low sodium beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 4 units egg
  • 2 tablespoons green onions

Directions

Step 1

In a bowl, combine the ground beef, onion powder, and black pepper. Mix well and shape into four equal-sized patties.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the beef patties for about 5-7 minutes on each side, or until cooked through. Remove the patties from the skillet and keep warm.

Step 3

In the same skillet, add the remaining tablespoon of olive oil and the mushrooms. Sauté the mushrooms for about 5 minutes until they begin to soften.

Step 4

Pour in the low sodium beef broth. Bring to a simmer.

Step 5

In a small bowl, mix the cornstarch with water to form a smooth slurry. Slowly stir the slurry into the simmering broth and mushrooms. Cook, stirring continuously, until the gravy thickens, roughly 3-5 minutes.

Step 6

In a separate pan, fry the eggs to your liking (sunny side up or over easy).

Step 7

To assemble, place 1 cup of cooked brown rice onto each plate. Top with a beef patty, followed by a generous ladle of mushroom gravy, and crown with a fried egg.

Step 8

Garnish with chopped green onions and serve immediately.
