Ingredients

  • 8 ounces Elbow macaroni
  • 3 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2 cups Low sodium chicken broth
  • 1 cup Evaporated skim milk
  • 1.5 cups Sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 pound Cooked lobster meat, chopped
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Ground mustard
  • 0.5 teaspoon Paprika
  • 0.5 cup Panko bread crumbs
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Cook the elbow macaroni according to package directions in unsalted water until al dente. Drain and set aside.

Step 3

In a large saucepan over medium heat, melt the unsalted butter.

Step 4

Add the flour to the melted butter, stirring constantly, and cook for about 2 minutes until the mixture is lightly golden.

Step 5

Slowly whisk in the low sodium chicken broth and evaporated milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5 minutes.

Step 6

Reduce heat to low and stir in the shredded cheddar and grated Parmesan cheese. Continue to stir until the cheeses are fully melted and the sauce is smooth.

Step 7

Season the cheese sauce with ground black pepper, ground mustard, and half the paprika. Mix thoroughly.

Step 8

Gently fold in the cooked macaroni and chopped lobster meat until everything is well combined.

Step 9

Transfer the lobster mac & cheese mixture into a lightly greased 9x13-inch baking dish.

Step 10

In a small bowl, combine the panko bread crumbs, the remaining paprika, and the chopped parsley.

Step 11

Sprinkle the bread crumb mixture evenly over the prepared mac & cheese.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the cheese is bubbly.

Step 13

Let cool for a few minutes before serving. Enjoy your low sodium lobster mac & cheese with a garnish of additional fresh parsley if desired.
