Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 4 slices Low sodium cooked bacon
  • 0.5 cup Sharp cheddar cheese, shredded
  • 3 tablespoons Green onions, sliced
  • 0.5 teaspoon Ground black pepper
  • 2 cloves Fresh garlic, minced

Directions

Step 1

Peel and chop the potatoes into even chunks to ensure they cook at the same rate.

Step 2

Place the potato chunks in a large pot and add enough cold water to cover them by about an inch.

Step 3

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer the potatoes until tender, about 15 minutes.

Step 4

While the potatoes are cooking, cook the minced garlic in 1 tablespoon of the unsalted butter over low heat until fragrant, about 1 minute. Set aside.

Step 5

Drain the cooked potatoes well in a colander and return them to the pot.

Step 6

Add the remaining 3 tablespoons of unsalted butter to the hot potatoes and mash them with a potato masher or fork until smooth.

Step 7

Gradually mix in the warm milk, starting with half and adding more as needed to reach your desired consistency.

Step 8

Stir in the cooked garlic, low sodium bacon (crumbled), shredded cheddar cheese, and sliced green onions.

Step 9

Season with ground black pepper, adjusting to taste.

Step 10

Serve the mashed potatoes warm, garnished with additional green onions or cheese if desired.
