Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 1.5 cups Low sodium cheddar cheese, shredded
  • 4 slices Turkey bacon
  • 2 tablespoons Green onions, chopped
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Step 2

Wash and scrub the russet potatoes thoroughly. Cut them into thin strips resembling fries, about 1/4-inch thick.

Step 3

In a large bowl, toss potato strips with olive oil, ground black pepper, garlic powder, and smoked paprika to evenly coat.

Step 4

Spread the seasoned potato strips evenly on the prepared baking sheet, ensuring they are in a single layer and not overcrowded.

Step 5

Bake in the preheated oven for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

Step 6

While the fries are baking, cook the turkey bacon. Place slices in a non-stick skillet over medium heat and cook until crispy, about 5-7 minutes. Once cooked, place on paper towels to drain and crumble into small pieces.

Step 7

Once the fries are done, remove from the oven and sprinkle the shredded low sodium cheddar cheese evenly over the hot fries. Return to the oven for an additional 3-5 minutes or until the cheese has melted.

Step 8

Remove the loaded fries from the oven and immediately top with crumbled turkey bacon and chopped green onions.

Step 9

Serve hot with a dollop of sour cream on the side if desired.
