  • 2 tablespoons Lemon Juice
  • 1 tablespoon Green Chilies, chopped
  • 2 tablespoons Fresh Coriander Leaves, chopped
  • 1 medium Brinjal (Eggplant)
  • 2 medium Tomatoes
  • 5 large Garlic Cloves
  • 2 tablespoons Mustard Oil
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Cumin Powder
  • 0.5 teaspoon Turmeric Powder

Directions

Step 1

To prepare the Litti, start by mixing the whole wheat flour, grated ginger, and carom seeds in a bowl. Add 2 tablespoons of ghee and mix until it forms a crumbly texture.

Step 2

Gradually add water and knead until the dough is soft and smooth. Cover and let it rest for 20 minutes.

Step 3

Meanwhile, prepare the filling by mixing the roasted gram flour (sattu) with lemon juice, chopped green chilies, chopped coriander leaves, and a tablespoon of mustard oil. Combine well to make a crumbly mixture.

Step 4

Divide the dough into equal portions and flatten each piece into a small disc. Place a spoonful of the gram flour mixture in the center, then fold the edges and seal to form a ball. Repeat with remaining dough.

Preheat your oven to 375°F (190°C). Place the littis on a baking tray and bake for 25-30 minutes or until golden brown, turning them halfway through for even cooking.

For the Choka, roast the brinjal, tomatoes, and garlic cloves on a gas stove or in an oven until the skin is charred and the insides are soft.

Peel off the charred skin and mash the brinjal, tomatoes, and garlic in a bowl.

Add the remaining mustard oil, red chili powder, cumin powder, and turmeric powder to the mashed mixture. Mix thoroughly.
