  • 6 cups water

  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 1 potato
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 3 tablespoons, chopped parsley

Directions

Step 1

Rinse the lentils under cold water and drain.

Step 2

Chop the onion, carrots, and celery into small pieces. Mince the garlic. Peel the potato and cut into 1/2-inch cubes.

In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5 minutes until the onion becomes translucent.

Add the garlic and sauté for an additional minute until fragrant.
