Ingredients

  • 3 whole (zested and juiced) Fresh lemons
  • 1.5 cups Heavy cream
  • 0.5 cup Granulated sugar
  • 1 tablespoon Gelatin powder
  • 0.25 cup Cold water
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar

Directions

Step 1

Start by zesting the lemons and setting the zest aside. Then, juice the lemons to obtain about 1/2 cup of lemon juice.

In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.

Step 3

In a small saucepan, combine the lemon juice and sugar. Heat over low-medium heat while stirring until the sugar dissolves. Do not let the mixture boil.

Once the sugar is dissolved, remove the saucepan from heat. Add the bloomed gelatin and stir until the gelatin is completely dissolved. Allow the mixture to cool to room temperature.
