Ingredients

  • 1 cup White rice
  • 4 cups Water
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Maple syrup
  • 1 pinch Salt (optional, for very low sodium use no salt)

Directions

Step 1

Rinse the rice thoroughly under cool running water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 40 minutes, or until the rice is very soft and much of the water is absorbed.

Step 4

Remove the saucepan from heat and let it cool for 10 minutes.

Step 5

Transfer the cooked rice into a blender. Add the remaining 2 cups of water and blend on high until the mixture is smooth and creamy, approximately 1 to 2 minutes.

Step 6

Strain the blended mixture through a fine-mesh sieve or a cheesecloth into a large bowl or pitcher to remove solid particles and achieve a silky texture.

Step 7

Stir in the vanilla extract, maple syrup, and optional pinch of salt for taste.

Step 8

Transfer the strained rice milk into an airtight container and refrigerate for up to 5 days.

Step 9

Shake well before serving. Enjoy your low sodium Latte di Riso chilled or use it as a base for various recipes.
