  • 1 teaspoon Black peppercorns
  • 4 cups Water
  • 1 medium Red bell pepper, chopped
  • 2 medium Potatoes, cubed
  • 2 tablespoons Tomato paste, no sodium
  • 2 tablespoons Fresh parsley, chopped
  • 2 Fresh thyme sprigs
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and minced garlic, sauté until the onions are translucent, about 5 minutes.

Add the beef tenderloin to the pot and brown on all sides for about 8-10 minutes.

Once beef is browned, add the carrots, celery, bay leaves, and black peppercorns to the pot.
