Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground lamb
  • 1 large Onion
  • 3 whole Garlic cloves
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Chopped fresh parsley
  • 0.5 teaspoon Ground coriander
  • 0.5 teaspoon Ground paprika
  • 1 tablespoon Sumac
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice

Directions

Step 1

Grate the onion using a box grater or food processor, and place it in a large mixing bowl.

Step 2

Mince the garlic cloves and add them to the bowl with the onion.

Step 3

Add the ground beef and ground lamb to the bowl with the onion and garlic.

Step 4

Sprinkle the ground turmeric, ground cumin, ground black pepper, chopped parsley, ground coriander, and ground paprika over the meat mixture.

Step 5

Drizzle the olive oil and lemon juice over the spices and meat.

Step 6

Using your hands, mix everything together until fully combined. The mixture should be somewhat sticky and easily moldable.

Step 7

Divide the meat mixture into 8 equal portions. Shape each portion into a long, flat sausage shape around a skewer. If the mixture doesn't stick well, refrigerate for 30 minutes before shaping.

Step 8

Preheat a grill or grill pan over medium-high heat.

Step 9

Once hot, carefully place the skewers on the grill. Cook for 4 to 5 minutes on one side, then flip and cook for another 4 to 5 minutes, or until the meat is cooked through and has nice grill marks.

Step 10

Remove the kebabs from the grill and let them rest for a few minutes. Sprinkle with sumac before serving for a tangy flavor.

Step 11

Serve the koobideh with your choice of accompaniments such as rice, grilled vegetables, or salad.
