Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 2 large Eggs
  • 2 tablespoons Olive oil
  • 1 cup Water
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, psyllium husk powder, and baking powder.

Step 3

In a separate bowl, lightly beat the eggs and then add the olive oil, water, and apple cider vinegar. Mix until well combined.

Step 4

Pour the wet ingredients into the dry ingredients slowly, stirring continuously until a dough forms. The psyllium husk will absorb the liquid and create a thick texture.

Step 5

Allow the dough to rest for about 5 minutes. This helps the psyllium husk absorb the moisture fully.

Step 6

Divide the dough into 8 equal portions. Roll each portion into a ball.

Step 7

Place one ball of dough on the parchment-lined baking sheet and flatten it with your hands to create a circular disk about 1/4 inch thick. Repeat with the remaining dough.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the pita breads are firm and lightly golden.

Step 9

Remove from the oven and allow to cool slightly before serving. These pitas can be stored in the refrigerator for up to a week or frozen for longer storage.
