Ingredients

  • 500 grams Beef chuck
  • 500 grams Pork shoulder
  • 3 medium Carrots
  • 2 medium Parsnips
  • 2 medium Onions
  • 3 pieces Bay leaves
  • 10 pieces Allspice berries
  • 15 pieces Black peppercorns
  • 750 milliliters Water
  • 5 sprigs Fresh thyme
  • 3 pieces Garlic cloves

Directions

Step 1

Cut the beef chuck and pork shoulder into large 2-inch chunks.

Step 2

Peel and slice the carrots and parsnips into thick rounds. Slice the onions into thick wedges.

Step 3

Peel and lightly crush the garlic cloves.

Step 4

In a large Dutch oven or heavy pot, layer half of the meat on the bottom, followed by half of the carrots, parsnips, and onions. Repeat with the remaining meat and vegetables.

Step 5

Add the bay leaves, allspice berries, black peppercorns, garlic cloves, and fresh thyme sprigs evenly over the top.

Step 6

Pour 750 milliliters of water over the layered ingredients.

Step 7

Cover the pot with its lid and place the pot into a preheated oven at 150°C (300°F).

Let the stew cook slowly for about 3 hours, or until the meats are tender and easily pull apart with a fork.

Check once or twice to ensure there is enough liquid. If it looks like it is drying out, add a little bit more water.

Once cooked, remove from the oven and let it rest for 10 minutes before serving.
