Ingredients

  • 2 cups (grated) bottle gourd (kaddu)
  • 4 cups full-fat milk
  • 0.5 cup sugar
  • 0.5 teaspoon cardamom powder
  • 10 strands saffron strands (optional)
  • 2 tablespoons almonds, slivered
  • 2 tablespoons pistachios, chopped

Directions

Step 1

Peel the bottle gourd and grate it using a grater.

Squeeze out excess water from the grated bottle gourd by pressing it firmly in your hands or using a muslin cloth.

In a large heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom of the pan.

Add the grated bottle gourd to the boiling milk. Keep stirring continuously to avoid burning.

Lower the heat to a simmer and cook until the bottle gourd is soft and the mixture thickens, approximately 30 minutes.
