Ingredients

  • 500 ml Milk
  • 200 ml Unsweetened Almond Milk
  • 1 teaspoon Natural Vanilla Extract
  • 1 tablespoon Cornflour
  • 50 grams Sugar
  • 2 tablespoons Rose Syrup
  • 5 grams China Grass/Agar Agar
  • 100 ml Water
  • 100 ml Chilled Almond Milk (for serving)
  • 2 tablespoons Chopped Nuts (cashews and almonds)
  • 2 scoops Ice Cream (preferably vanilla, low sodium)

Directions

Step 1

In a saucepan, add milk and bring to a simmer over medium heat.

Step 2

While the milk is heating, dissolve cornflour in a small amount of cold water to make a smooth paste.

Step 3

Add the cornflour paste to the simmering milk and stir continuously to avoid lumps.

Step 4

Continue simmering until the mixture thickens slightly, about 5 minutes.

Step 5

Add sugar and vanilla extract to the thickened milk mixture and continue to stir until all sugar dissolves. Turn off the heat and let it cool.

Step 6

In another small saucepan, add water and bring to a boil. Add the china grass/agar agar and stir until completely dissolved. This will take around 5 minutes.

Step 7

Pour the agar agar solution into a flat dish and let it set completely at room temperature. Once set, cut it into small cubes.

Step 8

To serve, take a tall glass and add a tablespoon of rose syrup at the bottom.

Step 9

Add a few cubes of set china grass, followed by some chopped nuts.

Step 10

Add a scoop of the thickened milk mixture and gently pour chilled almond milk on top.

Step 11

Finish with a scoop of low sodium vanilla ice cream and garnish with more chopped nuts, if desired.

Step 12

Serve immediately and enjoy this soothing and refreshing beverage.
