Ingredients

  • 500 grams Lean ground beef
  • 250 grams Ground pork
  • 1 cup Unsalted bread crumbs
  • 1 cup Whole milk
  • 1 medium Onion, finely chopped
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2 cups Low sodium beef broth
  • 2 tablespoons Low sodium soy sauce
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground allspice
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cup Unsweetened Greek yogurt

Directions

Step 1

In a small bowl, combine the unsalted bread crumbs and milk. Let them soak for about 10 minutes, ensuring the bread crumbs absorb the milk completely.

Step 2

In a large skillet over medium heat, melt 1 tablespoon of the unsalted butter. Add the finely chopped onion and sauté until softened and translucent, about 5 minutes. Set aside to cool slightly.

Step 3

In a large bowl, mix together the lean ground beef, ground pork, soaked bread crumbs, sautéed onion, black pepper, ground allspice, and ground nutmeg. Use your hands to gently combine the mixture being careful not to overwork the meat.

Step 4

Form the mixture into 1-1.5 inch meatballs and place them on a baking sheet lined with parchment paper.

Step 5

Preheat the oven to 200°C (400°F). Bake the meatballs for about 20 minutes, turning halfway through, until they are browned and cooked through.

Step 6

While the meatballs are baking, prepare the sauce. In the same skillet used for the onions, melt the remaining 3 tablespoons of unsalted butter over medium heat.

Step 7

Whisk in the all-purpose flour and cook until lightly golden and bubbly. Slowly whisk in the low sodium beef broth and low sodium soy sauce, simmering for about 5 minutes until the sauce begins to thicken.

Step 8

Once thickened, remove the sauce from the heat and whisk in the unsweetened Greek yogurt until smooth and creamy.

Step 9

Add the baked meatballs to the sauce, gently stirring to coat the meatballs evenly.

Step 10

Garnish with freshly chopped parsley before serving. Enjoy your low sodium Swedish meatballs with boiled potatoes or lingonberry jam on the side for an authentic experience.
