Ingredients

  • 2 pounds lean beef stew meat
  • 2 tablespoons olive oil
  • 2 units large onion, finely chopped
  • 1 unit red bell pepper, chopped
  • 4 units garlic cloves, minced
  • 3 units carrots, sliced
  • 2 tablespoons tomato paste
  • 3 tablespoons paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried marjoram
  • 2 units bay leaves
  • 4 cups low-sodium beef broth
  • 4 units potatoes, peeled and cubed
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium-high heat. Add the beef stew meat and brown on all sides, about 8-10 minutes. Remove the beef and set it aside.

Step 2

In the same pot, add the chopped onions and sauté until translucent, about 5 minutes.

Step 3

Add the chopped red bell pepper and garlic, cooking for another 2 minutes until fragrant.

Step 4

Stir in the sliced carrots, tomato paste, paprika, and ground black pepper. Cook for 3 more minutes, allowing the spices and paste to coat the vegetables.

Step 5

Return the browned beef to the pot, along with the dried marjoram and bay leaves. Pour in the low-sodium beef broth.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1 hour, stirring occasionally.

Step 7

Add the cubed potatoes and continue to simmer for another 30 minutes or until the potatoes and beef are tender.

Step 8

Remove from heat, discard the bay leaves, and stir in fresh chopped parsley.

Step 9

Serve the low sodium Hungarian Beef Gulasch hot, with crusty bread or over your choice of grain for a complete meal.
