Ingredients

  • 2 pounds turkey breast
  • 1 tablespoon liquid smoke
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon ground coriander

Directions

Step 1

Begin by placing the turkey breast in the freezer for about 1 hour until it is firm but not frozen solid. This will make it easier to slice.

Step 2

Take the turkey out of the freezer and slice it against the grain into thin strips, about 1/8 to 1/4 inch thick.

Step 3

In a large mixing bowl, combine the liquid smoke, apple cider vinegar, honey, smoked paprika, garlic powder, onion powder, black pepper, red pepper flakes, and ground coriander to create the marinade.

Step 4

Add the sliced turkey to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 4 hours, or overnight for best flavor.

Step 5

Preheat your oven to 175°F (80°C). Line baking sheets with aluminum foil and place wire racks over the foil.

Step 6

Arrange the marinated turkey slices in a single layer on the wire racks, making sure they are not touching each other.

Step 7

Bake the turkey in the preheated oven for 3 to 4 hours, or until dry but still slightly pliable. Check occasionally to make sure they do not become too crisp.

Step 8

Once done, allow the turkey jerky to cool completely on the racks.

Step 9

Store the jerky in an airtight container in a cool, dry place for up to two weeks, or refrigerate for longer storage.
