Ingredients

  • 2 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted onion powder
  • 1 teaspoon Dried dill
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Non-fat sour cream powder (low sodium)
  • 1 tablespoon Chives

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Step 2

Wash the russet potatoes thoroughly and peel them if desired. Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even chips about 1/8-inch thick.

Step 3

Place the potato slices into a bowl of cold water and let them soak for about 5 minutes. This helps remove excess starch and makes them crispier.

Step 4

Drain the potato slices and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Step 5

In a large bowl, toss the potato slices with olive oil, ensuring each slice is lightly coated.

Step 6

Arrange the potato slices in a single layer on the prepared baking sheets. Make sure they don’t overlap, as this will prevent them from crisping.

Step 7

Bake in the preheated oven for about 25-30 minutes, flipping them halfway through, until golden brown and crispy. Keep an eye on them to avoid burning.

Step 8

While the chips are baking, prepare the sour cream and onion seasoning. In a small bowl, combine unsalted onion powder, dried dill, garlic powder, ground black pepper, low sodium sour cream powder, and finely chopped chives. Mix well.

Step 9

Once the chips are done, remove them from the oven and immediately sprinkle the seasoning mixture over the hot chips.

Step 10

Allow the chips to cool slightly on the baking sheets to further crisp up, then serve or store in an airtight container for later.
