Ingredients

  • 150 grams Unsweetened shredded coconut
  • 50 grams Almond flour
  • 120 milliliters Coconut milk
  • 50 grams Coconut oil
  • 40 grams Honey
  • 1 teaspoon Vanilla extract
  • 20 pieces Whole almonds
  • 100 grams White chocolate (low sodium, optional)

Directions

Step 1

Dry roast the almonds in a non-stick skillet over medium heat for about 4-5 minutes, until lightly browned and fragrant. Set aside to cool.

Step 2

In a medium saucepan, combine coconut milk, coconut oil, honey, and vanilla extract over low heat. Stir until the coconut oil is melted and the mixture is smooth.

Step 3

Remove from heat and add in the almond flour, mixing until well combined.

Step 4

Gently fold in 100 grams of shredded coconut, ensuring the mixture is moist and holds together when pressed.

Refrigerate the mixture for about 30 minutes or until firm enough to shape.

Once cooled, scoop out small portions of the coconut mixture and flatten them slightly in your palm. Place a whole roasted almond in the center and roll into a smooth ball.

Roll each ball in the remaining shredded coconut until fully coated.
