Ingredients

  • 4 cups All-purpose flour
  • 1.5 cups Warm water
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Granulated sugar
  • 3 tablespoons Unsalted butter, melted
  • 0.33 cup Baking soda
  • 1 large Egg, beaten
  • 0.5 teaspoon Kosher salt

Directions

Step 1

In a large mixing bowl, combine the warm water and sugar, stirring until the sugar is dissolved.

Step 2

Add the active dry yeast to the sugar-water mixture and let it sit for 5-10 minutes, until it becomes foamy.

Step 3

Stir in the melted butter, then gradually add the flour, mixing with a wooden spoon or dough hook attachment until a dough forms.

Step 4

Knead the dough on a lightly floured surface for about 5 minutes until it is smooth and elastic. If using a stand mixer, knead with the dough hook attachment for about 3 minutes.

Step 5

Form the dough into a ball, place it into a lightly greased bowl, and cover it with a clean kitchen towel. Let it rise in a warm area for about 1 hour or until the dough has doubled in size.

Step 6

Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.

Step 7

In a large pot, bring 8 cups of water to a boil. Slowly add the baking soda to the boiling water.

Step 8

Meanwhile, punch down the risen dough and divide it into 4 equal portions. Roll each portion into a rope about 18 inches long.

Step 9

Cut each rope into 1.5-inch pieces to form the pretzel bites.

Step 10

Working in batches, boil the pretzel bites in the baking soda solution for about 30 seconds per batch. Use a slotted spoon to remove them and place them on the prepared baking sheets.

Step 11

Brush the tops of the pretzel bites with the beaten egg and sprinkle with a small amount of kosher salt.

Step 12

Bake in the preheated oven for 10-12 minutes or until golden brown.

Step 13

Allow the pretzel bites to cool slightly before serving. Enjoy fresh for the best texture!
