Ingredients

  • 2 pieces Boneless chicken breasts
  • 1 cup Buttermilk, low-sodium
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Cayenne pepper
  • 1 cup All-purpose flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 cup Water
  • 0 as needed for frying Canola oil
  • 2 pieces Whole wheat burger buns
  • 2 tablespoons Mayonnaise, low-sodium
  • 2 pieces Lettuce leaves
  • 1 piece Tomato, sliced

Directions

Step 1

Slice each chicken breast in half horizontally to create thinner fillets.

Step 2

In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, black pepper, and cayenne pepper.

Step 3

Place the chicken fillets in the buttermilk mixture, cover, and refrigerate for at least 1 hour or overnight for best results.

Step 4

In a separate bowl, mix together the flour, cornstarch, and baking powder.

Step 5

Remove chicken from marinade, allowing excess to drip off, and dredge each fillet in the flour mixture, pressing lightly to ensure coating sticks.

Step 6

Add water to the leftover flour mixture to create a batter and dip the coated chicken in this batter.

Step 7

Heat canola oil in a skillet over medium-high heat. Once hot, fry the chicken for 4-5 minutes on each side or until crispy and golden brown. Ensure the internal temperature reaches 165°F (74°C).

Step 8

Remove chicken from oil and place on a paper towel-lined plate to drain excess oil.

Step 9

Lightly toast the burger buns.

Step 10

Assemble the burger by spreading a tablespoon of low-sodium mayonnaise on the bottom half of each bun, followed by a lettuce leaf, the fried chicken fillet, a slice or two of tomato, and the top half of the bun.

Step 11

Serve immediately and enjoy your homemade low sodium KFC Zinger Burger!
