Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup low sodium panko breadcrumbs
  • 2 tablespoons unsalted butter
  • 1 cup milk
  • 4 medium-sized or about 2 pounds potatoes
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 cup low sodium corn kernels
  • 1 cup low sodium chicken broth
  • 2 tablespoons unsalted butter for gravy
  • 2 tablespoons all-purpose flour
  • 1 cup reduced sodium shredded cheddar cheese
  • 0 as needed olive oil spray

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the chicken breasts into bite-sized pieces.

Step 3

Melt the 2 tablespoons of unsalted butter in a small bowl. Coat the chicken pieces in the melted butter.

Step 4

Place the low sodium panko breadcrumbs in a shallow dish, then roll each piece of butter-coated chicken in the breadcrumbs to coat well.

Step 5

Place the coated chicken pieces onto a baking sheet lined with parchment paper. Spray lightly with olive oil spray to help them crisp up.

Step 6

Bake the chicken in the oven for 20-25 minutes or until golden brown and cooked through, flipping halfway for even cooking.

Step 7

While the chicken is baking, peel and cut the potatoes into quarters. Place them in a large pot of cold water and bring to a boil.

Step 8

Reduce heat to medium and cook the potatoes until tender, about 15-20 minutes.

Step 9

Drain the water from the pot and return the potatoes. Add 1/2 cup milk, garlic powder, and black pepper, then mash until smooth and creamy. You can add more milk if needed for a smoother consistency.

Step 10

For the gravy, melt 2 tablespoons of unsalted butter in a small saucepan over medium heat. Stir in the flour and cook for about 1 minute.

Step 11

Gradually whisk in the low sodium chicken broth and remaining 1/2 cup of milk, stirring constantly until the mixture thickens into a gravy. Adjust thickness with more broth or milk as desired.

Step 12

Heat the low sodium corn kernels in the microwave or on the stovetop until warm.

Step 13

To assemble the bowls, add a portion of mashed potatoes to each serving bowl, followed by some corn and crispy chicken pieces.

Step 14

Drizzle with the low sodium gravy and sprinkle the reduced sodium cheddar cheese over the top.

Step 15

Serve hot and enjoy your Low Sodium Homemade Famous Bowl!
