Ingredients

  • 3 cups Rolled oats
  • 1 cup Raw almonds
  • 0.5 cup Raw sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Honey
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 1 cup Dried blueberries

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, sunflower seeds, and shredded coconut.

Step 3

In a small saucepan over low heat, melt the coconut oil and honey together until well combined. Remove from heat and stir in the vanilla extract and cinnamon.

Step 4

Pour the honey mixture over the dry ingredients and mix well until everything is evenly coated.

Step 5

Spread the mixture onto the prepared baking sheet in an even layer.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the granola is golden brown, stirring once halfway through to ensure even baking.

Step 7

Remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will become crispier.

Step 8

Once cooled, stir in the dried blueberries.

Step 9

Store the granola in an airtight container at room temperature for up to two weeks.
