Ingredients

  • 1 lb Lean beef (such as sirloin or round steak), thinly sliced
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 tsp Dried oregano
  • 0.5 tsp Ground black pepper
  • 1 tbsp Lemon juice
  • 1 cup Plain Greek yogurt (low-sodium preferred)
  • 0.5 cup Diced cucumber, peeled and seeded
  • 1 tbsp Fresh dill, chopped
  • 0.5 tsp Cumin powder
  • 0.5 cup Red onion, thinly sliced
  • 1 Tomato, diced
  • 4 pieces Whole wheat pita bread
  • 1 cup Romaine lettuce, shredded

Directions

Step 1

In a large bowl, combine the minced garlic, dried oregano, ground black pepper, lemon juice, and olive oil. Add the thinly sliced beef and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Step 2

While the beef is marinating, prepare the yogurt sauce. In a medium bowl, mix the Greek yogurt, diced cucumber, fresh dill, and cumin powder until well combined. Cover and refrigerate until ready to serve.

Step 3

Heat a large skillet over medium-high heat. Drain the beef from the marinade and add to the hot skillet. Cook the beef slices for about 2-3 minutes on each side or until browned and cooked through. Remove from the heat and set aside.

Step 4

Warm the whole wheat pita bread in a dry skillet or in the oven for 2-3 minutes until soft and pliable.

Step 5

To assemble the gyros, place a warm pita on a serving plate. Spread a generous tablespoon of the yogurt sauce over the center of the pita.

Step 6

Top with cooked beef slices, followed by a handful of shredded lettuce, thinly sliced red onion, and diced tomato.

Step 7

Fold the pita over the filling to enclose it. Repeat with the remaining pitas and ingredients.

Step 8

Serve the beef gyros immediately with extra yogurt sauce on the side.
