Ingredients

  • 1.5 cups Unsweetened shredded coconut
  • 0.5 cup Sweetened condensed coconut milk
  • 2 tablespoons Honey
  • 24 pieces Whole raw almonds
  • 1 cup Dark chocolate chips (70% cacao, unsweetened)
  • 1 tablespoon Coconut oil

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium bowl, mix the unsweetened shredded coconut, sweetened condensed coconut milk, and honey until well combined.

Step 3

Using your hands, form the coconut mixture into small, rectangular mounds about 2 inches long and 1 inch wide. Place each mound onto the prepared baking sheet.

Step 4

Gently press two whole raw almonds into the top of each coconut mound. Once all almond-topped mounds are prepared, place the baking sheet in the freezer for about 30 minutes to let them firm up.

Step 5

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each interval, until the chocolate is fully melted and smooth.

Step 6

Remove the coconut-almond mounds from the freezer. Using two forks, dip each mound into the melted chocolate, making sure they are completely coated. Let any excess chocolate drip off before placing the coated mound back onto the baking sheet.

Step 7

Once all mounds are coated in chocolate, place the baking sheet in the refrigerator for the chocolate to set, which should take about 20 minutes.

Step 8

After the chocolate has fully hardened, enjoy your delicious low sodium homemade Almond Joy bars. Store any leftovers in an airtight container in the refrigerator.
