Ingredients

  • 1000 grams baby potatoes
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 large, peeled and crushed garlic cloves
  • 1 tablespoon olive oil
  • 0.5 whole lemon
  • 0.5 teaspoon black pepper
  • 2000 milliliters water

Directions

Step 1

Rinse the baby potatoes thoroughly under cold water to remove any dirt or debris. Cut larger potatoes in half to ensure they cook evenly with the smaller ones.

Step 2

In a large pot, add the cleaned potatoes, rosemary, thyme, and crushed garlic cloves.

Step 3

Pour 2000 milliliters of water into the pot, ensuring the potatoes are completely submerged.

Step 4

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and cover with a lid. Let the potatoes simmer for about 20-25 minutes or until they are fork-tender.

Step 5

While the potatoes are cooking, squeeze the juice from half a lemon and set aside.

Step 6

Once the potatoes are done, drain the water using a colander. Discard the rosemary and thyme sprigs, as well as the garlic cloves.

Step 7

Return the potatoes to the pot and drizzle with 1 tablespoon of olive oil and the fresh lemon juice.

Step 8

Season with 0.5 teaspoon of black pepper and gently toss the potatoes to evenly coat them with the oil, lemon juice, and pepper.

Step 9

Transfer the potatoes to a serving bowl and serve warm.
