Ingredients

  • 4 pieces Chicken breast halves, boneless and skinless
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice, fresh
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 1 tablespoon Fresh rosemary, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Lemon zest
  • 1 cup Unsalted breadcrumbs
  • 1 tablespoon Parmesan cheese, grated
  • 1 cup Low sodium chicken broth

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a bowl, combine olive oil and lemon juice, and marinate the chicken breasts in this mixture for at least 15 minutes.

Step 3

In another bowl, mix together parsley, thyme, rosemary, minced garlic, black pepper, lemon zest, and breadcrumbs.

Step 4

Remove chicken from the marinade, letting excess oil drip off, and coat each piece with the herb and breadcrumb mixture, pressing firmly to adhere.

Step 5

Sprinkle a small amount of grated Parmesan cheese onto each herb-crusted chicken piece.

Step 6

Heat a non-stick skillet over medium-high heat and lightly sear the chicken breasts for about 2 minutes on each side, until golden brown.

Step 7

Transfer the seared chicken breasts to a baking dish and pour the low sodium chicken broth around the filets to keep them moist during baking.

Step 8

Bake in the preheated oven for 20 to 25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Step 9

Remove from the oven and let the chicken rest for 5 minutes before serving.

Step 10

Serve warm with your choice of side dishes such as steamed vegetables or a fresh green salad.
