Ingredients

  • 1 pound extra-lean ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 4 garlic cloves, minced
  • 28 ounces unsalted diced tomatoes
  • 2 tablespoons tomato paste
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups low sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0.25 cup sliced green onions (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onions and cook for about 5 minutes until they start to soften.

Step 2

Add the diced green and red bell peppers to the pot. Sauté for an additional 5 minutes, until the peppers begin to soften.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the ground turkey to the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 7-8 minutes.

Step 5

Stir in the unsalted diced tomatoes, tomato paste, kidney beans, black beans, and low sodium chicken broth.

Step 6

Mix in the chili powder, cumin, paprika, ground black pepper, and optional cayenne pepper.

Step 7

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Once the chili has thickened and flavors have melded, taste and adjust seasonings if needed.

Step 9

Serve hot, garnished with chopped fresh cilantro and sliced green onions.
