Ingredients

  • 4 pieces Low sodium turkey sausage links
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 2 medium Carrot, sliced
  • 2 stalks Celery stalk, sliced
  • 1 medium Zucchini, sliced
  • 1 14.5-ounce can Canned no-salt-added diced tomatoes
  • 1 cup Low sodium chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Black pepper
  • 1 large Russet potato, diced
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Brown the turkey sausage links on all sides until they are cooked through, about 10 minutes. Remove from the skillet and cut them into bite-sized pieces.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes until they are translucent and fragrant.
