  • 2 whole Carrots, diced
  • 2 stalks Celery stalks, diced
  • 2 medium Potatoes, peeled and diced
  • 2 medium Tomatoes, chopped
  • 1 leaf Bay leaf
  • 1 tsp Fresh thyme
  • 1 tsp Fresh rosemary, chopped
  • 0.5 tsp Ground black pepper
  • 6 cups Water
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion to the pot and sauté until they become translucent, about 5 minutes.

Stir in the minced garlic and sauté for another minute until fragrant.
