Ingredients

  • 0.5 cup Unsalted bread crumbs

  • 2 cloves Garlic (minced)
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 1 tablespoon Olive oil
  • 3 medium Yukon gold potatoes (diced)
  • 2 medium Carrots (sliced)
  • 2 Celery stalks (sliced)
  • 1 medium Onion (chopped)
  • 4 cups Low-sodium beef broth
  • 2 cups Water
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

In a large bowl, combine ground beef, bread crumbs, egg, minced garlic, onion powder, black pepper, and dried oregano. Mix until evenly combined.

Step 2

Form the mixture into small meatballs, about 1 inch in diameter.

Heat olive oil in a large pot over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan. Brown the meatballs on all sides, about 5 minutes, then remove them from the pot and set aside.
