  • 2 pounds beef chuck, cubed

  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 2 cups low-sodium beef broth
  • 1 cup tomato puree
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and cubed
  • 0.25 cup cilantro, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.

In the same pot, add the chopped onions and sauté until they become soft and translucent, about 5 minutes.
