  • 1 medium, diced zucchini
  • 6 cups low sodium vegetable broth
  • 2 cups water
  • 1 15-ounce can, no added salt diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 1 cup macaroni
  • 2 cups baby spinach
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and minced garlic, and sauté for about 3-4 minutes until the onion becomes translucent.

Stir in the diced carrots and celery, and cook for another 5 minutes, stirring occasionally.
